My Favorite Recipe

I love to cook. Sometimes I don’t feel like cooking, but a lot of time I enjoy it and don’t mind being the one who makes the meals. Provided everyone isn’t complaining that they don’t like it. (I live with a lot of different taste buds so sometimes finding something everyone will eat is almost impossible.)

That being said, some nights I don’t feel like spending hours making dinner, especially when I’m already tired from doing other things.

So while I rarely make the second recipe, it is one of MY favorite meals. On the other hand, the first recipe is one of the most requested. And according to my brother, no one can make it like me—even when our Momo follows my recipe exactly, it doesn’t taste right. :-)



Reb’s “Secret” Meatloaf
My siblings are notoriously picky when it comes to food and neither one of them will eat meatloaf. I made this one night for dinner because everyone was tired and they loved it. Now no one else in the house is allowed to make meatloaf. I actually just modified another recipe when I didn’t have the right ingredients for it.

Ingredients:
2 envelopes onion soup mix
3 1/2 pounds ground beef
2-3 slices of bread
1 egg
about a 1/2 cup of Jack Daniels original #7 BBQ sauce (I don’t measure this, just kinda dump it in—so this is an estimate)
3/4 C water

Directions:
Combine all ingredients in large bowl.

Grease a corning ware pan with Pam or other cooking spray, cook in microwave for 15 minutes or until meat is no longer pink. Serve.

Irish Beef Stew Recipe

Ingredients:
2 lbs. beef for stew
1 onion, finely chopped
2 stalks celery, finely chopped
1 bay leaf
2 lg. potatoes, peeled and chopped into chunks
3 lg. carrots, peeled and cut into thick slices
1 (approximately 16 oz.) bag frozen peas
2 cans beef broth
2 (8 oz.) cans tomato sauce
Flour in a plastic bag
2 tbsp. cooking oil
Salt and pepper to taste

Directions:
Cut beef into bite-size cubes. Add beef cubes to flour in bag and shake until cubes are coated with flour. Heat oil in large pot. Add celery, onion and bay leaf. Sauté until onions and celery are translucent but not browned. Add the beef a little at a time to the pan and brown beef completely. Add beef broth and tomato sauce. If necessary, add enough water to cover beef. Bring to boil. Reduce heat to simmer

Cover pot and cook for 1 1/2 to 2 hours until beef is tender. Add carrots and potatoes. Cook 1/2 hour until vegetables are tender. Add frozen peas. Cook 5-10 minutes until peas are tender.
